Moringa is a small tree that grows in various parts of Africa, India and some eastern Asian countries. Its leaves are used for medicinal purposes like curing fever and colds, promoting digestion, curing diarrhea, lowering cholesterol etc.

Moringa leaves contain about two-thirds of the daily requirement for water soluble vitamins such as Vitamin C, Vitamin A and B9.

They also contain minerals such as iron, calcium and magnesium.

The leaves are typically eaten raw or can be dried to make tea or juices which helps in digestion with its natural laxative properties.

Moringa tree leaves are rich in tocopherols, preventing heart diseases, atherosclerosis and brain aging.

They are also considered an anti-inflammatory agent that reduces inflammation in the body.

The seeds of this plant provide protein, as well as magnesium.

Moringa can be found in many different forms.

The leaves can be used as a cooking ingredient, powder from the dried seeds can be used in drinks or supplements, or juice pressed from dried seeds.

Recipe 1 – Simple

Ingredients

  • 1 bunch of chopped collard greens (chopped off their long stems and leaves if you have time before you juice)
  • Something to blend (we prefer to slice the collard green leaves, stemming the stems and with a little help from our Blendtec blender)
  • Apricots
  • Moringa powder
  • Fresh squeezed lemon juice

How to Make it

1 – Place all your ingredients in a high powered blender or mixer.

2 – Blend on high until there are no seeds left. You may need to strain the liquid at this point depending on what kind of blender you have.

  • 1 organic carrot

  • Moringa Powder
  • 4 fresh organic asparagus spears
  • 2 cups of homemade chicken or vegetable broth or purified water or coconut water

How to Make it

  • 3 Spoonful Honey
  • Moringa Powder
  • 2 Cups Milk

5- You can always switch out the Milk for Water

  • Moringa Powder
  • 2 Cups Milk
  • Greek Yogurt
  • Peanut Butter
  • 1 Banana

1 – Core the apple before!

2- Place all your ingredients in a high-powered blender or mixer.

3 – Blend on high until there are is no powder left. You may need to strain the liquid at this point depending on what kind of blender you have.

5- If the protein quantity is too high in this drink, you can lower it by switching out the Peanut butter and Greek yogurt for easier to digest solutions.

Moringa and Potato Soup

Time to cook 1 hour.

Ingredients

  • 6 medium russet potatoes
  • 3 medium carrots
  • 1 small onion
  • Salt and pepper to taste
  • 48 oz chicken broth
  • 2/3 cup fresh Moringa leaves
  • 1/2 tsp basil
  • 1 tsp parsley
  • 1/2 tsp oregano
  • 2 bay leaves
  • 1/3 cup butter
  • 1/3 cup flour
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup cheese

Prepare vegetables.

Wash and peel the potatoes and carrots. Carefully dice the potatoes into half-inch cubes, and cut the carrots into quarter-inch slices. Peel the skin from the onion, and carefully cut that as well.

Boil vegetables in chicken broth.

Add your vegetables into a large pot, and then pour in a carton of chicken broth (or about two large cans). Add salt and pepper to taste. Turn the stove on medium-high and cover with a lid, leaving a small opening for steam to escape. Bring the mixture to a boil; this will take approximately 10-20 minutes, depending on your individual stove.

Add herbs and Moringa leaves and reduce heat to a simmer.

Once the broth has begun to boil, reduce the heat to medium-low. Add your Moringa leaves, basil, parsley, oregano, and bay leaves. Stir gently, and then re-cover.

Melt butter and add flour.

While the potato soup is simmering, melt a third of a cup of butter in a medium-sized saucepan. When it’s completely melted, add the flour to the butter and whisk until the mixture is smooth and completely combined into a batter-esque mixture.

Add milk and heavy cream to your butter-flour mixture, and whisk.

Slowly add the milk into the butter and flour mixture. Continue whisking until the mixture begins to boil, then lower the temperature back to a simmer and add the heavy cream. Continue whisking until the mixture thickens just slightly. Depending on your individual stove, this can take 5-10 minutes.

Pour milk mixture into the Moringa & Potato broth.

Use a fork to test whether your potatoes are nice and soft. If they’re still a little firm, continue boiling the pot for another 5-10 minutes, checking on the potatoes periodically. Once the potatoes have softened and break apart easily when poked with a fork, slowly pour in the milk mixture into the Moringa and potato broth, and stir.

Serve with cheese and enjoy!

Remove the soup from the heat. If bubbling, let cool for a few minutes. Add half a cup of cheese to the soup. Serve and enjoy! Save any leftovers in the fridge.

The entire dish is relatively simple to make; the hardest part is probably just peeling so many potatoes. Once done, though, you have a warm, scrumptious bowl of deliciousness that nearly melts on your tongue. The Moringa adds a nice bite to the soup, the milk and potatoes give it a soft creaminess, and the result is something you probably aren’t going to want to share.
